WHOLEMEAL PIKELETS

  • 1 cup wholemeal self-raising flour 
  • 1/4 cup raw sugar 
  • 1 egg 
  • 3/4 cup of milk, approximately 

Sin flour into a basin, add sugar, make well in the center of dry ingredients, add egg and most of the milk, gradually stir dry ingredients into milk mixture, and beat until smooth Add enough of remaining milk to give a smooth, pouring consistency. The mixture will thicken on standing It may be necessary to add a little more milk to the batter as pikelets are being cooked Drop tablespoonfuls of mixture onto a hot, greased pan, when bubbles appear on top, turn, cook the other side 

Make about 20 

CURRENT AND LEMON PIKELETS

  • 3/4 cup self-raising flour 
  • 2 tablespoons castor sugar 
  • 1 teaspoon grated lemon rind 
  • ½ cup currants 
  • 1 egg 
  • ½ cup milk 

Sift flour and sugar into the basin, add lemon rind and currants, and make well in the center of dry ingredients. add combined beaten egg and milk. Gradually stir in flour, and mix until smooth. Drop tablespoonfuls of mixture onto a hot, greased pan, cook until bubbles appear, turn, and cook the other side. 

Makes about 15.

MIXED FRUIT ROCK CAKES 

  • 2 cups self-raising flour 
  • 1/3 cup sugar 
  • 1/4 teaspoon mixed spice 
  • 90g butter 
  • 1 cup mixed fruit 
  • 1 egg 
  • 1/2 cup milk 

Sift dry ingredients into a bowl and rub in the butter. Stir in chopped fruit and combined egg and milk, and mix only until all ingredients are moistened Drop tablespoonfuls of mixture onto lightly greased oven trays Bake in a moderately hot oven for 15 to 20 minutes. loosen and cool on trays 

Makes about 15

APOT AND HONEY ROCY CAKES 

  • 1 cup wholemeal self-rising flour 
  • 1 cup white sell - raising flour
  • 1/4 cup sugar 
  • 1/4 teaspoon cinnamon 
  • 90g butter 
  • 1/2 cup chopped dried apricots 
  • 2 tablespoons sultanas 
  • 1 egg 
  • 2 tablespoons honey 
  • 1/2 cup milk 

Sift dry ingredients into the basin, and rub in the butter. Add apricots and sultanas combine egg and honey, add to mixture with milk, mix only until all Drop ingredients are moistened. tablespoonfuls of mixture in rough heaps onto lightly greased oven trays Bake in a moderately hot oven for 15 to 20 minutes, loosen, then cool on trays 

Makes about 15
