IDEAL FRUIT CAKES FOR TEA

Here are some old and new favorites of yours and ours: homely recipes, ideal for afternoon tea with family and friends. 

LEMON SOUR CREAM CAKE

  •  250g butter
  •  2 teaspoons grated lemon rind 
  • 2 1/4 cups castor sugar 
  • 6 eggs 
  • 1/4 cup self-raising flour 
  • 2 cups plain flour 
  • 3/4 cup sour cream 

Cream butter, lemon rind, and sugar until light and fluffy Beat in eggs, one at a time Stir in sifted dry ingredients alternately with sour cream Spread mixture into a greased deep 23cm round cake tin or well-greased fancy ring tin, as shown, which has base lined with greased greaseproof paper. Bake in a moderately slow oven for 1 1/2 to 1 3/4 hours 

WALNUT COFFEE CAKE 

  • 125g butter 
  • 1 teaspoon vanilla 
  • 3/4 cup castor sugar 
  • 1 egg
  • 1/2  cup sour cream 
  • 3/4  cup plain flour 
  • 2 tablespoons self-raising flour 
  • 125g walnuts 
  • 1 tablespoon castor sugar, extra 
  • 1/2 teaspoon cinnamon

Cream butter, vanilla, sugar, and egg until light and fluffy, stir in sour cream, then sift flour in two batches Spread half the mixture over the base of a loaf tin ( base measures 9cm x 22cm ) which has base lined with greased greaseproof paper, sprinkle evenly with half the combined chopped walnuts, extra sugar, and cinnamon Spread remaining cake mixture on top, sprinkle with remaining walnut mixture Bake in moderate oven 45 minutes Stand few minutes before turning onto a wire rack to cool
