CHOCOLATE MINT FLAN
INGREDIENTS:
- 185g plain chocolate biscuits
- 125g unsalted butter
FILLING
- 125g unsalted butter
- 1 cup icing sugar
- 100g block peppermint chocolate
- 1 tablespoon water
- 2 eggs
TOPPING
- 30g dark cooking chocolate
- ½ cup thickened cream
CHOCOLATE MINT FLAN RECIPE:
Melt butter in the pan, add finely crushed biscuits, and mix well. Press the crumb mixture over the base of the 23cm flan tin. Refrigerate 30 minutes. Spoon the Filling onto the chocolate base, and smooth the top with a knife. Decorate with Topping. Refrigerate for several hours before serving.
Filling: Cream butter and sifted icing sugar until light and fluffy. Melt chocolate and water over hot water, cool to room temperature, do not allow to set. Add chocolate to butter mixture, and beat on high speed until smooth. Add eggs one at a time, beating well after each addition.
Topping: Grate chocolate, sprinkle over the Filling, and decorate with whipped cream.
