BREAD WITHOUT YEAST

Try these recipes and you will be convinced it is not necessary to use yeast to make delicious breads. They will all freeze well; slice them before freezing for easier handling.

 BRAN BREAD 

This is a recipe sent in by a reader some years ago One piece of this bread provides two tablespoons of bran per day The bread can be sliced and frozen, and one slice is taken out each day it is delicious toasted 

  • 4 cups self-raising flour 
  • 1 tablespoon baking powder 
  • 2 teaspoons salt
  • 2  1/2 cups unprocessed bran 
  • 15g butter 
  • 2 tablespoons golden syrup or honey 
  • cup water 
  • 1 1/4 cups milk, approximately 

Sih flour, baking powder, and salt into a basin, add bran mix well. Combine butter, golden syrup, and water in a pan heat until butter is melted add milk Pour liquid into well in the centre of dry ingredients mix with a knife to a firm dough Turn onto the floured surface. knead lightly until smooth Press into well-greased loaf tin, brush top with milk Cover loosely with a piece of greased aluminum foil pleated lengthwise down the center to allow room for bread to nse Bake in moderate oven for 1 hour remove from tin, and return to aven on oven tray bake uncovered further 20 to 30 minutes. cool on wire rack 


BEER BREAD 

  • 3  1/4 cups self-raising flour
  • 2 teaspoons salt 
  • 2 teaspoons sugar 
  • 375ml can beer 

Sint dry ingredients into the basin, make well in the center, add beer, and use a knife to mix to a soft, sticky dough Turn onto a floured surface and knead lightly until smooth Place into the well-greased loaf tin, brush top with a little milk, bake in moderately hot oven 50 minutes Turn onto a wire rack to cool 


MILK BREAD 

  • 2 1/4 cups self-raising four 
  • 1 teaspoon salt
  • 1 teaspoon baking powder 
  • 60g butter 
  • 2 tablespoons wheat germ 
  • 1 tablespoon unprocessed bran 
  • 1 teaspoon grated lemon rind 
  • 1 099 
  • 1 cup milk, approximately 

Sim flour, salt, and baking powder into basin Rub in butter, add wheatgerm bran and lemon rind, make well in center, mis in beaten egg and enough milk to mix to a soft dough Turn dough onto floured surface, knead lightly until smooth Press into well-greased loaf tin Brush top with a little milk, bake in moderately hot oven 10 minutes Reduce heat to moderate bake further 40 to 50 minutes.

BUTTERMILK HEALTH BREAD 

  • 2 cups buttermilk cup honey 
  • 1/4 cup molasses 
  • 2 teaspoons bicarbonate of soda 
  • 1 teaspoon salt 
  • 1 1/2 cups wholemeal plain flour 
  • 1 cup white plain flour 
  • 1/2 cup wheat germ 
  • 1/2 cup sultanas 

Combine buttermilk, honey, molasses soda, and sat in a bowl Sift flour together into buttermilk mixture. return husks from sitter to bowl Add wheatgerm and sultanas, and mix wet Pour mixture into well-greased loaf tin Bake in moderate oven for 1 hour Leave in tin 5 minutes before turning onto wire rack to cool.
