EGG MOUSSE

INGREDIENTS

  •  6 hard-boiled eggs
  •  1/4 cup mayonnaise 
  • 3 teaspoons gelatine 
  • 1/4 cup chicken stock 
  • 1/2 cup thickened cream 
  • 1 tablespoon anchovy sauce 
  • 3 drops tabasco 
  • 1 tomato 
  • 4 black olives 

  • watercress 

EGG MOUSSE RECIPE:

Shell eggs, chop roughly: combine with mayonnaise Add gelatine to stock, stir over low heat until dissolved, cool slightly. Add gelatine to eggs. mix well. Fold in softly beaten cream, anchovy sauce, and Tabasco. Pour mixture into a lightly oiled 20cm sandwich tin, refrigerate until set, and garnish with sliced tomato, halved olives, and watercress. 

Serves 6.
