APPLE AND ROSE WINE JELLY 

INGREDIENTS:

  • 1kg Granny Smith apples ( about 5 large ) 
  • 1 lemon 
  • 1½ liters water 
  • 1 cup rose wine 
  • 1 / 2kg sugar, approximately 

 APPLE AND ROSE WINE JELLY RECIPE:

Wash fruit, chop unpeeled apples and lemon roughly, place in a large boiler with water, cover, bring to boil, reduce heat, and simmer covered 1 hour, or until fruit is pulpy. Add wine, cover, and simmer further 30 minutes. Strain the mixture through a fine, well-wrung-out damp cloth, and allow the mixture to drip through the cloth overnight, do not squeeze or press the mixture through the cloth; this gives a cloudy jelly. 

Next day, discard the fruit mixture, measure the liquid, and allow 1 cup of sugar to each cup of liquid. Combine liquid and sugar in the boiler, and stir over high heat without boiling until the sugar is dissolved. Bring to boil, do not stir, and boil as rapidly as possible uncovered for 10 to 15 minutes, or until the mixture will jell when tested on a cold saucer. Pour mixture into hot sterilized jars, and seal when cold. 

Makes about 6 cups.
