ITALIAN FIG & NUT CAKE
YOU WILL NEED:
- 125g ( 4 oz ) roasted hazelnuts
- 90g ( 3 oz ) slivered almonds
- 125g ( 4 oz ) dried figs
- 90g ( 3 oz ) dark chocolate
- 125g ( 4 oz ) mixed peel
- 3 eggs
- ½ cup sugar
- 1/4 cup self-raising flour
ITALIAN FIG & NUT CAKE
Roughly chop hazelnuts, almonds, figs, and mixed peel; finely chop chocolate. Place eggs and sugar in the small bowl of an electric mixer, and beat on medium speed until the mixture is white and fluffy.
Add the nuts, figs, peel, and chocolate to the egg mixture, and stir in gently until combined.
Add sifted flour to the mixture, and fold into the mixture gently. Place the mixture into a greased 20cm x 10cm ( 8in x 4in ) loaf tin. Bake in a moderate oven for 1 hour or until light golden brown and cooked when
tested. Allow to cool slightly in the tin, and turn out onto a wire rack to cool completely before cutting.
