ITALIAN COCONUT BISCUITS
YOU WILL NEED :
- 125g ( 40z ) shredded coconut
- ½ cup sugar
- 2 large egg yolks
- 1 large egg white
ITALIAN COCONUT BISCUITS RECIPE:
Beat together egg yolks and sugar until the mixture is creamy. Stir in shredded coconut.
Beat egg white until firm peaks form, and gently stir into the coconut mixture.
Drop teaspoonfuls of mixture onto greased oven trays. Bake in a slow oven for 15 minutes, reduce heat to very slow, and bake a further 30 minutes or until the biscuits are golden brown.
