ITALIAN LIVER WITH ONIONS
YOU WILL NEED
- 500g ( 11b ) calve liver ( or lamb fry )
- flour
- 3 onions
- 30g ( 1oz ) butter
- 1 tablespoon oil
- 2 tablespoons oil, extra
- salt,
- pepper
- 1 tablespoon chopped parsley
ITALIAN LIVER WITH ONIONS RECIPE:
Remove the thin skin around the liver, and cut the liver into thin strips.
Coat liver with flour and place in a sieve or colander; shake away excess flour. Peel onions, and slice thinly. Heat butter and oil in a pan, add onions and cook over moderate heat until soft; remove from pan.
Add extra oil, turn the heat to high, add liver, and cook, stir the ring constantly, for 2 minutes or until it changes color. Return onions to the pan and stir through, add parsley, and cook a further 2 minutes. Season with salt and pepper.
