ITALIAN FRITO MISTO
YOU WILL NEED:
- 500g ( 11b ) green king prawns
- 250g ( 80z ) scallops
- 500g ( 1lb ) small squid
- 250g (80) fish fillet oil for deep-frying
BATTER
- 1 cup self-raising flour
- 1 cup water, approximately
- ½ teaspoon bicarbonate soda pinch of salt
ITALIAN FRITO MISTO RECIPE:
Sift flour, bicarbonate of soda, and salt into bowl.
Gradually add water, and stir until the batter is smooth. A little more water
may be needed if the batter is too thick.
Shell prawns, leaving tails intact; remove back veins. Clean squid, cut into thin rings. Remove any bones from fish fillets, and cut them into pieces. Clean scallops.
Heat oil in a large saucepan. Dip prawns, squid, fish pieces, and scallops into the batter; drain off excess batter. Deep - fry seafood in hot oil, a few pieces at a time, until golden brown. Remove from oil, and drain well on absorbent paper.
Serve hot with Tartare Sauce.
Serves 6 as an entree
