ITALIAN FRIED SARDINES
YOU WILL NEED:
- 12 sardines salt, pepper flour
- 1 egg
- 2 tablespoons milk
- 2 cups fresh breadcrumbs oil for frying lemon wedges
HERBED BUTTER
- 125g ( 40z ) butter
- 2 teaspoons chopped parsley
- 1 shallot 1 clove garlic
- salt,
- pepper

ITALIAN FRIED SARDINES RECIPE:
Scale fish with the back of the knife, working from the tail
toward the head. Cutaway head, using scissors; cut the underside of the
fish open. Clean fish inside.
Open sardines out flat. Cut backbone at the tail end, as shown. Gently lever the backbone out, starting from the tail end Wash the fish and pat dry.
Coat sardines lightly in flour, seasoned with salt and
pepper; dip in combined beaten egg and milk, and coat well with breadcrumbs.
Heat oil and the reserved herbed butter in a pan, and cook sardines on both sides until golden brown and cooked through, approximately 2 minutes on each side. Serve with herbed butter and lemon wedges.
HERBED BUTTER
butter until smooth and creamy, add parsley, finely chopped shallot, crushed garlic, salt, and pepper, beat well. Spoon half the butter into a small bowl, and refrigerate until firm. Reserve the remaining half for frying.
Serves 4 as an entree
