ITALIAN SPINACH WITH SPIRALI SAUCE
Another excellent recipe from La Tavolaccia, Glebe
Point, Sydney. At the restaurant, the sauce is served over the spiral-shaped
pasta; you'd need about half a 750g packet of the spiral.
YOU WILL NEED:
- 8 stalks spinach
- 90g ( 30z ) coppa ( smoked pork )
- 1 small clove of garlic
- 1/4 red pepper
- ½ small onion
- 1 small red chili
- 4 tablespoons oil salt, pepper
- 2 tablespoons grated parmesan cheese
ITALIAN SPINACH WITH SPIRALI SAUCE RECIPE:
Wash spinach and remove stalks, cut finely. Chop
pepper finely; peel the onion, chop finely. Remove seeds from chili, and cut
chili into thin slices. Chop coppa into small dice..
Heat oil in a pan, add crushed garlic, pepper, onion, chili, and coppa; cook for 2 minutes. Add spinach and cook a further 2 minutes stirring constantly.
Add parmesan cheese. season with salt and
pepper.
