TOMATOES AND BLACK BEAN PASTA SAUCE
INGREDIENTS
- 500g fusilli pasta
- 1/4 cup olive oil
- 3 small fresh red chilies, chopped
- 3 cloves garlic, crushed
- 1/3 cup drained sliced sun-dried tomatoes
- 3 green shallots, sliced
- 2 tablespoons chopped fresh basil
- 1/2 teaspoon ground ginger
- 1/4 cup packaged salted black beans, chopped
- 410g can tomatoes
- 1/4 cup tomato paste
- 2/3 cup water
- 1/2 teaspoon Vecon
- 2 green shallots, chopped, extra
TOMATOES AND BLACK BEAN PASTA SAUCE METHOD:
Add pasta to a large pan of boiling water, boil, uncovered, until just tender, and drain. Heat oil in a wok or pan, add chilies, garlic, sun-dried tomatoes, shallots, basil, ginger, and beans, stir - fry for 1 minute.
Add pasta, stir - fry until hot. Blend or process undrained canned
tomatoes until smooth, add to wok with paste, water, and Vecon, stir - fry
until hot. Serve sprinkled with extra shallots.
Serves 4.
Note: Recipe best
made close to serving.
Freeze: Not
suitable.
Microwave: Pasta
suitable.
