NUTTY MACARONI LOAF WITH YOGURT SAUCE
INGREDIENTS
- 1 cup ( 125g ) small macaroni pasta
- 1 cup ( 70g ) stale breadcrumbs
- 1 cup ( 130g ) ground cashews
- 1 cup ( 130g ) ground Brazil nuts
- 1 cup ( 80g ) grated fresh parmesan cheese
- 1 cup ( 125g ) grated tasty cheese
- 2 tablespoons sultanas
- 1/2 teaspoon garam masala
- 1/2 teaspoon turmeric
- 1/4 teaspoon ground cumin
- 1 red pepper, finely chopped
- 2 tablespoons chopped fresh coriander
- 5 eggs, lightly beaten
YOGURT SAUCE
- 1 cup plain yogurt
- 2 teaspoons chopped fresh coriander
- 1/2 teaspoon garam masala
NUTTY MACARONI LOAF WITH YOGURT SAUCE METHOD:
Grease a 14cm x 21cm loaf pan, line the base and sides with paper, and grease the paper. Add pasta to the pan of boiling water, boil, uncovered, until just tender, and drain; cool. Combine pasta, breadcrumbs, nuts, cheeses, sultanas, spices, pepper, coriander, and eggs in a bowl; mix well. Spoon mixture into prepared pan, smooth surface.
Bake, uncovered, in a moderate oven
for about 30 minutes or until firm. Serve loaf hot or cold with sauce. Yogurt
Sauce: Combine all ingredients in the bowl, and mix well.
Serves 6.
Note: The recipe can be
made 2 days ahead.
Covered, in the refrigerator.
Freeze: Cooked loaf
suitable.
Microwave:
Pasta suitable.
