NO-COOK TOMATO ONION SAUCE WITH FRESH HERBS
INGREDIENTS
- 1 red Spanish onion, finely chopped
- 2 large tomatoes, peeled, seeded, chopped
- 1 clove garlic, crushed
- 1 tablespoon lemon juice
- 1/4 cup olive oil
- 1 teaspoon chopped fresh lemon thyme
- 1/2 teaspoon cracked black peppercorns
- 300g fusilli pasta
- 1 tablespoon shredded fresh basil
NO-COOK TOMATO ONION SAUCE WITH FRESH HERBS METHOD:
Cover the onion with water in the bowl, stand for 1 hour;
drain. Combine tomatoes with onion, garlic, juice, oil, thyme, and peppercorns
in a bowl; cover, refrigerate for 1 hour.
Just before serving,
add pasta to a large pan of boiling water, boil, uncovered, until just tender,
and drain. Serve cold sauce over hot pasta, sprinkle with basil
Serves 4.

a day ahead
