NO-COOK TOMATO ONION SAUCE WITH FRESH HERBS

INGREDIENTS

  • 1 red Spanish onion, finely chopped
  • 2 large tomatoes, peeled, seeded, chopped
  • 1 clove garlic, crushed
  • 1 tablespoon lemon juice
  • 1/4 cup olive oil
  • 1 teaspoon chopped fresh lemon thyme
  • 1/2 teaspoon cracked black peppercorns
  • 300g fusilli pasta
  • 1 tablespoon shredded fresh basil

NO-COOK TOMATO ONION SAUCE WITH FRESH HERBS METHOD:

Cover the onion with water in the bowl, stand for 1 hour; drain. Combine tomatoes with onion, garlic, juice, oil, thyme, and peppercorns in a bowl; cover, refrigerate for 1 hour.

Just before serving, add pasta to a large pan of boiling water, boil, uncovered, until just tender, and drain. Serve cold sauce over hot pasta, sprinkle with basil

Serves 4.

Note: Sauce can be made a day ahead

Storage: Covered, in refrigerator

Freeze: Not suitable

Microwave: Pasta suitable
