MANGO ORANGE CREAMS WITH PASSIONFRUIT SYRUP
INGREDIENTS
- 1 cup orange juice
- 3 cups water
- 18 extra large pasta shells
- 1 large mango, finely chopped
- 250g ricotta cheese
- 2 tablespoons castor sugar
PASSIONFRUIT SYRUP
- 1/3 cup fresh passionfruit pulp
- 1/2 cup sugar
- 1 cup water
MANGO ORANGE CREAMS WITH PASSIONFRUIT SYRUP METHOD:
Bring orange juice and water to boil in a pan, add pasta, boil, uncovered until pasta is just tender; drain; cool. Combine mango, cheese, and sugar in a bowl; mix well. Fill pasta shells with the mango mixture. Serve shells with passionfruit syrup.
Passionfruit Syrup: Combine all ingredients in a pan, stir over heat until sugar is dissolved. Bring to boil, simmer, uncovered, for 5 minutes or until slightly thickened; cool.
Serves 6.
Note: Filling and syrup can be made a day ahead.
Storage: Covered, in the refrigerator.
Freeze: Not suitable.
Microwave: Pasta suitable.
