BAKED RED PEPPERS AND GARLIC WITH PASTA
INGREDIENTS
- 4 large red peppers
- 2 cloves garlic, finely chopped
- 13 cup olive oil
- 1 tablespoon brown sugar
- 400g penne pasta
- 1/4 cup shredded fresh basil
BAKED RED PEPPERS AND GARLIC WITH PASTA METHOD:
Cut peppers into strips, combine peppers, garlic, oil,
and sugar in a baking dish; mix well. Bake pepper mixture in a moderate oven
for about 1 hour or until peppers are soft. Add pasta to a large pan of boiling
water, boil, uncovered, until just tender; drain. Return pasta to the pan, stir
in pepper mixture and basil.
Serves 4.
Note: The recipe is best made
just before serving.
Freeze: Not suitable.
Microwave: Pasta
suitable.
