TASTY MINCE AND SPAGHETTI CASSEROLE
INGREDIENTS
- 250g packet spinach spaghetti pasta
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 1 clove garlic, crushed
- 500g minced beef
- 425g can of tomato puree
- 125g mushrooms, sliced
- 2 tablespoons chopped fresh parsley
- 2 teaspoons sugar
- 1/2 cup grated fresh parmesan cheese
SAUCE
- 30g butter
- 2 tablespoons plain flour
- 1 1/2 cups milk
TASTY MINCE AND SPAGHETTI CASSEROLE METHOD:
Add pasta to a large pan of boiling water, boil, uncovered, until just tender; drain. Heat oil in a pan, add onion and garlic, and cook, stirring, until the onion is soft.
Add mince, and cook, stirring, until browned. Stir in puree, bring to a boil, and simmer, covered for 15 minutes. Stir in mushrooms, parsley, and sugar, and simmer, uncovered further 5 minutes.
Spread half the pasta into a greased ovenproof dish (8-cup capacity ). Top with mince mixture, then remaining pasta, pour over sauce; sprinkle with cheese. Bake in a moderately hot oven for about 15 minutes or until lightly browned.
Sauce: Melt butter in a pan, add flour, stir over heat until bubbling. Remove from heat, gradually stir in milk, stir over heat until sauce boils and thickens.
Serves 4.
Note: The recipe can
be made a day ahead.
