QUICK AND EASY LASAGNE
INGREDIENTS
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 1 clove garlic, crushed
- 500g minced beef
- 2 x 500g jars of pasta sauce
- 240g packet ( 16 ) instant lasagne pasta sheets
- 500g ricotta cheese
- 1/2 cup milk
- 250g mozzarella cheese, grated
- 1/2 cup cream
- 1/4 cup grated fresh parmesan cheese
QUICK AND EASY LASAGNE METHOD:
Heat oil in a pan, add onion and garlic, and cook, stirring, until the onion is soft. Add mince, cook, stirring, until well browned. Stir in pasta sauce, cook until heated through; remove from heat.
Line a shallow greased 20cm x 30cm ovenproof dish with a layer of pasta, and top with one-third of the meat mixture. Spread with one-third of the combined ricotta cheese and milk, and sprinkle with one-third of the mozzarella cheese. Repeat layering, finishing with pasta; pour over cream, and sprinkle with parmesan cheese.
Bake in a moderate
oven for about 40 minutes or until pasta is tender. Cover lasagne with foil
during cooking if the surface begins to brown too quickly.
Serves 6.
Note: Recipe can
be made 2 days ahead.
