LAMB RAVIOLI WITH MINTED YOGURT
INGREDIENTS
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 1 clove garlic, crushed
- 200g minced lamb
- 1 teaspoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon cornflour
- 1/4 cup water
- 2 quantities of plain pasta dough
MINTED YOGURT
- 500g carton of plain yogurt
- 1 tablespoon chopped fresh mint
- 1 tablespoon chopped fresh basil
LAMB RAVIOLI WITH MINTED YOGURT METHOD:
Heat oil in the pan, add onion and garlic, and cook, stirring, until the onion is soft. Add lamb, curry powder, and cumin, and cook, stirring, until lamb is browned. Stir in blended cornflour and water, bring to boil; cool.
Roll pasta dough until 1 1 / 2mm thick, cut into 41 / 2cm rounds and top half the rounds with 1/2 level teaspoon of lamb mixture. Brush the edges of the rounds with water, top with the remaining rounds, and press the edges together. Just before serving, add ravioli to a large pan of boiling water, boil, uncovered, for about 8 minutes or until just tender; drain.
Combine ravioli with minted
yogurt. Minted Yogurt: Combine all ingredients in a bowl; mix well.
Serves 4.
Note: Pasta and
sauce can be prepared a day ahead.
Storage: Covered, in the refrigerator.
Freeze: Cooked
pasta suitable.
