CREAMY MUSHROOM AND MUTTON PASTA SAUCE
INGREDIENTS
- 250g fusilli pasta
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 4 mutton rashers, thinly sliced
- 2 tablespoons pine nuts
- 250g mushrooms, thinly sliced
- 1/2 cup sour cream
- 1 egg, lightly beaten
- 1/4 cup grated fresh parmesan cheese
- 1/4 cup chopped fresh parsley
CREAMY MUSHROOM AND MUTTON PASTA SAUCE METHOD:
Add pasta to a large pan of boiling water, boil, uncovered, until just tender, and drain. Heat oil in a pan, add onion,, mutton, and pine nuts, and cook, stirring, until onion is soft.
Add mushrooms, and cook, stirring, until mushrooms are soft. Stir in combined sour cream, egg, cheese, and parsley, and stir over low heat until heated through. Serve over pasta.
Serves 4.
Note: The recipe is best made just before serving.
