SPOOKY TOWER CAKE
MATERIALS
- 20cm ( 8in ) square cake
- 20cm ( 8in ) round cake board
- 1.5kg ( 3lb ) sugarpaste / rolled fondant
- dark blue, black & pink food coloring pastes.
- icing/confectioners' sugar in a sugar shaker
- 375g ( 12oz / 1 ½ cups ) buttercream
- sugar glue
- edible sparkle powder/petal dust/blossom tint
EQUIPMENT
- large rolling pin
- sharp knife
- cake smoother
- small square cutter
- fine paintbrush
SPOOKY TOWER CAKE METHOD:
Color 375g ( 120z ) of sugarpaste dark blue Roll out 280g ( 9oz ) and cover the cake then put outside to dry. Trim the crust from the cake and slice the top. Cut the cake into four equal-sized squares Trim each square to create four circles Sandwich together with buttercream, then spread the surface of the cake with a layer of buttercream.
Color 1 kg ( 2lb ) of sugarpaste pale blue-grey using a tiny amount of the blue and black food colorings. Position the cake down onto 875g ( 1 ¾ lb ) of rolled - out blue - grey sugarpaste Roll it around the cake, trimming any excess from the join and at either end. Stick the join together with sugar glue. then rub gently with the cake smoother to close. Roll the cake carefully on the work surface to smooth out any wrinkles.
Roll out the remaining blue-grey sugarpaste and cut a 5cm ( 2in ) deep strip. Using the square cutter, cut out the turrets. Moisten around the top edge of the cake with a small amount of sugar glue. Carefully roll up the turret and position it against the top of the cake, then unroll it all the way around. Glue the join and smoothly closed.
Color the grey
sugarpaste trimmings slightly different shades by adding tiny amounts of blue,
black, and pink food colorings. Shape flattened balls of paste and stick them over
the tower and around the door and windows. Cut wedges for the window sills.
Create the staircase by making the lowest stair the thickest, each further
stair getting gradually thinner
Model a long, tapering sausage of white sugarpaste for the ghostly tail and stick it in position around the cake twisting up to the top window. Make all the ghosts with white sugarpaste and stick them in place with sugar glue, holding for a few seconds until secure Model their eyes using flattened balls of white. Using the fine paintbrush, paint the eyes and mouths with the black food coloring Brush the edible sparkle powder over the cake.
