INGREDIENTS
- 250g fine fresh egg noodles
- 2 sticks celery, chopped
- 1 large carrot, chopped
- 1 large onion, chopped
- 125g snow peas
- 500g cooked prawns, shelled
HONEY DRESSING
- 1/2 cup light soy sauce
- 1/2 cup water
- 2 tablespoons honey
- 2 tablespoons chopped fresh coriander
- 1 clove garlic, crushed
PRAWN AND NOODLE SALAD WITH HONEY DRESSING
Add noodles to a large pan of boiling water, boil, uncovered, until just tender, and drain; rinse under cold water, and drain.
Cut noodles in half. Boil, steam,, or microwave vegetables until just tender, rinse under cold water, and drain.
Just before serving, combine noodles, vegetables, and prawns in a bowl; top with dressing.
Honey Dressing:
Combine all ingredients in a jar; shake well.
Serves 6.
Note: Can be
prepared a day ahead.
Storage: Covered,
in the refrigerator.
Freeze: Not
suitable.
Microwave:
Suitable.
