JEWELLERY BOX CAKE
MATERIALS
- 20cm ( 8in ) square cake
- 30cm ( 12in ) petal-shaped cake board
- 1.4kg ( 2lb 13oz ) sugarpaste / rolled fondant
- blue & pink food coloring pastes
- icing/confectioners' sugar in a sugar shaker
- 410g ( 13oz / 1½ cups ) buttercream
- sugar glue
- mints, sweet / candy necklaces, mini sweets/candies & silver dragees
- edible pink sparkle powder/petal dust/blossom tint
EQUIPMENT
- large rolling pin
- sharp knife
- cake smoother
- template
- medium paintbrush
JEWELLERY BOX CAKE METHOD:
Color 375g ( 12oz ) of sugarpaste blue. Using icing sugar to prevent sticking, roll out the sugarpaste and cover the cake Trim any excess from around the edges then put aside to dry.
Cut the cake in half, then sandwich one half on top of the other using buttercream Spread a layer
of buttercream over the surface of the cake to help the sugarpaste stick.
Roll out the remaining white sugarpaste. Position one side of the cake down onto the sugarpaste and cut around the shape with a sharp knife. Cover all sides of the cake in the same way, smoothing the joins closed Cover the top in the same way, but cut the sugarpaste slightly wider than the actual cake to create a lip at the front.
Position the cake on
the center of the cake board and smooth the surface with a cake smoother.
Using your finger, slippery slight dips around the lid to create a wavy effect.
Colour the
sugarpaste trimmings pink. Roll out and cut two ballet shoes using the
template. Smooth around the edge of each shoe to round off, then press in the
center to create a dip and outline the inside of each shoe. Thinly roll out
the remaining pink sugarpaste and cut strips for the shoe ribbons. Stick the
shoes and ribbons on the front of the cake with sugar glue.
Arrange all the
different types of candy jewelry around the cake, securing them in position with
sugar glue. Build up the mint necklace from the cake board, so each mint is
supported by the previous one. Stick with sugar glue, pressing firmly in
place. Create a ring with a loop of white sugarpaste. and use a few silver
dragees to create a sparkling jewel. When the cake is dry, use the paintbrush
to dust it with edible pink sparkle powder.
