GOLDEN PASTA BITES WITH GARLIC MAYONNAISE
INGREDIENTS
- 2 cups ( 160g ) fusilli pasta plain flour
- 2 eggs, lightly beaten packaged breadcrumbs
- oil for deep-frying
GARLIC MAYONNAISE
- 3 egg yolks
- 2 teaspoons dry mustard
- 1 tablespoon white vinegar
- 2 cloves garlic, crushed
- 1 1/2 cups olive oil
- 1 tablespoon finely chopped red pepper
- 1 tablespoon chopped fresh chives
- 1 tablespoon chopped fresh parsley
GOLDEN PASTA BITES WITH GARLIC MAYONNAISE
METHOD:
Pasta should be
added to a large pot of boiling water, boiled until tender, drained,
rinsed well under cold water, and pat dried with absorbent paper. Lightly toss the pasta in flour, and shake away
excess flour.
Dip pasta in eggs then breadcrumbs. Just before serving,
deep-fry pasta in hot oil until lightly browned; drain on absorbent paper.
Serve hot pasta with garlic mayonnaise.
Garlic Mayonnaise: Blend or process egg yolks, mustard, vinegar, and garlic until smooth. With the motor operating, add oil gradually in a thin stream, and blend until thick. Transfer mixture to bowl, stir in pepper and herbs.
Serves 4.
Note: Pasta can be prepared a day ahead. Mayonnaise can be made a day ahead.

Covered, in the refrigerator.
Freeze: Not
suitable.
Microwave: Not suitable.
