CREAMY HERBED CHICKEN WITH SPINACH SPAGHETTI
INGREDIENTS
- 4 chicken breast fillets, sliced
- 2 teaspoons paprika
- 1 teaspoon cracked black peppercorns
- 250g packet of cream cheese
- 1/3 cup grated fresh parmesan cheese
- 1 cup water
- 1 small chicken stock cube, crumbled
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh mint
- 40g butter
- 500g spinach spaghetti pasta
CREAMY HERBED CHICKEN WITH SPINACH SPAGHETTI METHOD:
Combine chicken, paprika, and peppercorns in a bowl; stand for 20 minutes. Blend or process cheeses, water, stock cube, and herbs until
almost smooth.
Melt butter in a pan, add chicken mixture, and cook, stirring,
over high heat until well browned. Add cheese mixture, bring to a boil, and simmer
uncovered, for 5 minutes.
Boil the pasta
until just tender, uncovered, in a large pot of boiling water; drain Serve pasta with creamy chicken.
Serves 6.
Note: Best made
just before serving.
Freeze: Not
suitable.
Microwave:
